MONKFISH KEBABS WITH TABBOULEH
Even if you’re not a Joe Wicks fan (ahem), you’ll definitely like these super fresh, ridiculously simple monkfish kebabs… If you’re not doing them on the BBQ, you can just whack them under the grill for the same finish – regardless of the weather. And the tabbouleh side salad actually tastes better on day two – packed full of fresh herbs with a zingy lemon finish. Add a few chilli flakes if you like a bit of a kick. RECIPE VIA WOMAN & HOME.
TURKISH KEBABS WITH CHILLI SAUCE
Its’a ALL about the fresh chilli sauce here. Serve these grilled chicken kebabs with flatbreads, a dollop of cool Greek yoghurt and lashings of this homemade sauce. We’d definitely leave the chicken to marinate overnight if you can – the more flavour, the better! RECIPE VIA BBC GOOD FOOD.
SWEETCORN & AVOCADO SALAD
Grill the sweetcorn on the BBQ for an extra delicious, smoky flavour. If you’re a veggie, add a sprinkle of feta, hummus + pitas, and you’ve pretty much got dinner done. RECIPE VIA WAITROSE.
There’s coleslaw and then there’s this. One of our favourite spring-summer recipes – this is an absolute humdinger of a salad. Serve with a few nuts for extra crunch and a little harissa for a spicy finish. This slaw works brilliantly with grilled meats – or alongside something simple like oven-baked salmon.
